Earth Day Lunch Box

This Earth-Day lunch is filled with lots of sustainable deliciousness…and fun!

Who can resist a homemade gelatin sky with creamy clouds floating by? Or green leaf and cheese cut outs with spinach tortillas? And how about some sweet NatureBox Dried California Peaches to top it all off? These all came together in a stackable stainless {earth-friendly} box…accompanied by a banana. Writing on a banana with a toothpick in the morning will allow it to brown in the writing by lunchtime. 

The leaf and cheese cutouts are made with a cookie cutter (or knife, for the simpler one). Use the excess for a soup or salad topping.

This lunch celebrates a fun day…it reminds us all to be more mindful of the wonderful place we call home. And don’t forget to tuck in a washable/re-usable napkin!

Homemade Gelatin & Clouds
Serves: 6


  • 1 cup all-natural, ice cold fruit juice (I used blueberry, but you can play around with flavors and colors, if you prefer) 
  • 4 packets plain gelatin
  • 3 cups boiling fruit juice (you can play around with the color consistency by using less boiling juice and add in some boiling water instead)
  • 1/2 cup heavy cream
  • 1 tablespoon raw sugar

1. Pour cold juice into large bowl. 

2. Sprinkle with gelatin and allow it to absorb for a minute. 

3. Pour boiling juice/water into the bowl and stir until all of the gelatin dissolves. 

4. From here, pour into containers to set up overnight (I pour mine straight into my kids’ lunch containers).  

5. The next morning, whip heavy cream and raw sugar until stiff peaks form. Dollop the whipped cream onto the gelatin to form clouds.
