Gingerbread Muffins

With Christmas just 3 weeks away, I couldn’t help but make these lightened-up gingerbread muffins while listening to Christmas carols in my kitchen. These muffins are wonderfully wintery, cozy, light and moist. Best of all, it makes the house smell amazing!

Yields 12 muffins


  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 tsp ginger
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup Greek yogurt
  • 1/2 cup applesauce
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 2 large eggs


Preheat oven to 350 degrees F. Coat a 12-cup standard muffin tin with nonstick spray; set aside.

In a large bowl, combine flours, ginger, cinnamon, nutmeg, cloves, baking powder, baking soda and salt.

In a large glass measuring cup or another bowl, whisk together Greek yogurt, applesauce, brown sugar, molasses and eggs.

Pour mixture over dry ingredients and stir using a rubber spatula just until moist.

Scoop the batter evenly into the muffin tray. Place into oven and bake for 13-15 minutes, or until a tester inserted in the center comes out clean.

Remove from oven and cool on a wire rack.
