Shrimp Fried Farro

What’s on the menu for dinner tonight? Whether or not you’re observing Meatless Monday, try this super easy dish! For a fresh new take on classic fried rice, we used farro instead.

Shrimp and edamame make this meal substantial while chopped pineapple offers a sweet balance to its savory flavor.

Serves: 6
Prep Time: 15 minutes
Cook Time: 8 minutes


  • 1 tablespoon vegetable oil
  • 1 pound peeled and deveined shrimp, chopped
  • 3 cups cooked and chilled farro
  • 1 cup chopped pineapple
  • 3/4 cup shelled edamame beans
  • 2 eggs
  • 4 green onions, thinly sliced
  • 1-1/2 tablespoons low-sodium soy sauce
  • 1/2 teaspoon ground white pepper


1. In wok or large skillet, heat oil over medium-high heat. Add shrimp; cook until almost cooked through, stirring frequently, about 2 to 3 minutes.

2. Add farro, pineapple and edamame; cook 2 minutes, stirring frequently.

3. Push farro mixture to sides of wok, creating a well in center of wok. Crack eggs into well, scramble vigorously with spoon; cook 2 minutes (keeping eggs in well) or until eggs are full cooked. 

4. Add onions, soy sauce and white pepper; toss until all ingredients are well combined.

    I am extremely upset about your business practice of forcing someone who has received a Naturebox GIFT being forced to OPT OUT, or else be charged a monthly fee. As if having to give you a credit card prior to receiving the gift isn’t bad enough, it is far worse that you refuse to honor my immediate attempts at cancellation of the "Gift" subscription scheduled to start the moment the 3 month gift via GROUPON ends. Neither my phone calls at the outset, nor my email attempts were honored. The only cancellation you would accept is one that happens the moment the subscription ends; most unfortunately for me, I happened to be out of town at that date and did not call, which triggered an immediate charge to my credit card. Also unfortunate for me is that you refuse to acknowledge all previous attempts to cancel. The charge is not egregious, but neither is that the issue. Hopefully, others will beware. I’ll also contact groupon in attempt to help others avoid this problem. Your follow up email notifying me that you want me back adds insult to injury.

      We’re so sorry for the confusion, Debra. For a Groupon deal, yes, the subscription is ongoing and you will be re-billed each month unless you cancel. However, all of our gift subscriptions are finite, which means the recipient will not be asked to enter their credit card information and when the gift subscription is finished (3, 6 or 12 months) the recipient will no longer receive our monthly snacks.
