Recipe by Chung-Ah of Damn Delicious
Start the new year with this healthy, white bean dip with a spicy, chipotle kick. This would work perfectly as a party dip or as a healthy snack without compromising taste.
Yields 4-6 servings
- 1 (15-ounce) can cannellini beans, drained and rinsed
- 1-3 chipotle peppers in adobo sauce
- 2 cloves garlic
- 2 TBSP Meyer lemon juice, or more to taste
- 1 tsp cumin
- 1 tsp chili powder
- 6 TBSP olive oil
In the bowl of a food processor, combine cannellini beans, chipotle peppers, garlic, Meyer lemon juice, cumin and chili powder.
With the motor running, add olive oil in a slow stream until emulsified.
Serve with pita bread or tortilla chips, if desired.
